glazed lemon cookies


With the change of weather and snow flurries it had me in the baking mood. I wasn't quite ready to whip out the holiday baking despite the snow, so I found this via the martha stewart website. I definitely am not a Martha, but I can copy just fine and I think these turned out really great!

The Recipe:
Preheat oven to 350 degrees. Whisk together 2 c. flour, 1/2 tsp. baking soda and 1/2 tsp. salt. In another bowl cream together 1/2 c. butter and 1 c. sugar. Add in one egg, 1 tsp. vanilla and 2 Tbsp. lemon juice. Slowly mix in flour mixture. You can also add lemon zest, but I did not have any.
Drop by large tablespoons onto a cookie sheet and bake for 15-20 minutes until golden. Cool for two minutes and then transfer to rack.
Once cookies are completely cooled top with glaze made up of 1/3 c. lemon juice and 2 c. icing sugar.
